Day 2

What is it with my kids and waking up at the butt crack of dawn??? Today's breakfast was again made super early! But all i could think about was COFFEE. I'm trying to ween myself off coffee because we are getting into the crazy hot time of year in fort Irwin. 2-3 cups of coffee a day in 114 heat always make me feel dehydrated. So more water and less coffee.  Today i only had 1 coffee with non dairy cream so i think that's good.  Here's what i ate today...

Breakfast
I  made bran meal with vanilla flavored almond milk. I don't like the vanilla flavor at all, way to sweet. lesson learned. Other then that it was really good a super filling.
Bran meal with flax made with vanilla almond milk, Strawberries and blueberries, Coffee with non dairy creamer.

Snack
Apples and peanut butter. i forgot how good these are together!


Lunch
 I made a black bean salad and rolled it into a wrap. Eden is teething and wants to be held nonstop today. So i  anticipated only having one hand to eat. Lucky for me i got to eat without a grabbing, fussy, munchie. Plus got to be Entertained by watching her be cute with Kevin :)

Snack #2
I'm not kidding when i say Eden nursed at nap time for over an hour. By the time she was done and asleep i was STARVING! If i wasn't tracking everything on here i could of talked myself into "cheating" instead i made myself a BIG snack. POWER UP.

Dinner
Its Sunday so leftovers is what we normally always do. Still it was good and satisfying.
Coconut rice, green salad with Sol food dressing, Black bean salad, and Grilled Veggies
Dessert
Its the end of the day!  kids are in bed and the moon is putting on an amazing show tonight. I'm finishing off my day with a huge glass of water and my fave lemon ice.

I feel great! i know its only been 2 days but having to take the time to feed myself is something i haven't been very good at lately.  I'm good at making sure Kevin (who at this moment is eating a mint chocolate chip shake next to me in bed....!), azure, and Eden are taken care of. But me i let slide.  Taking the time to make healthy food for myself feels good. So simple. why has it been so hard for me to do?

Next week I'm going to try new recipes. Here are a few on my list. Blueberry muffins, Tacos,  Biscuits and gravy.  I'm excited for the coming week!
